This is an ideal lunch either eaten warm or prepared in advance. You could bread your own chicken by coating in cornflour, egg then breadcrumbs but this is a quick and easy alternative. The chicken is so tender after being cooked in the Air Fryer – you could also pop this in the oven

INGREDIENTS (serves 1)

Breaded Chicken breast (I used M&S Made without Wheat so that it’s gluten free for me)
2 Bacon Medallions
30g Yogurt (I used Alpro dairy free but you can use whatever you like)
30g Light Mayonaise
50ml Milk (I used Almond Milk to avoid Dairy)
1/2 Lemon – squeeze in the juice
Salt & Pepper
Dried Oregano
15g Parmesan (I used a dairy free alternative)
Lettuce & Tomatoes
