Starting the new year with my favorite dessert, Bolo De Cenoura. Bolo de Cenoura is a Brazilian Carrot Cake; the carrots are used to keep the cake moist as opposed to flavor the cake like in North America/EU.
In this video, I demonstrate and offer a tutorial on my own personal recipes for this delicious dessert. I also get North Americans to try it for the first time and recorded their reaction. Finally, I had the king and queen of Brazilian YouTube Leon and Nilce from Coisa De Nerd and Cade a Chave to try my Triple Chocolate Bolo De Cenoura.
Here is The Bolo De Cenoura Recipe:
3-4 Medium sized (or large sized) Carrots
3-4 Eggs (depending on size.. I use 3 large eggs)
2 cups of sugar
2 cups of white flour
1 cup of oil
1 tablespoon of baking powder
2 Teaspoons of Vanilla
Preheat your oven to 375 Fahrenheit or 190 Celsius
Peel and chop the carrots into smaller chunks
Blend the carrots with the cup of oil and the eggs in a blender
Mix the cups of sugar and cups of flour with the mixture in a large bowl… BLEND LIKE YOUR LIFE DEPENDED ON IT!
Power the mixture into a well oiled pan, preferably a non stick pan.
Bake for 30 minutes or until desired texture (make sure you check the center and not the side. You can gently poke it with a fork, if it no longer sticks to the fork you should absolutely take it out of the oven)
MAKE SURE YOU WAIT UNTIL THE CHOCOLATE SAUCES AS WELL AS THE CAKE ARE COOL TO THE TOUCH!! DONT FROST UNTIL THEN!!
There are many ways to make the Chocolate sauces I used, use your favorite but make sure it’s not too wet for the filling or the outer layer. The white chocolate sauce for the triple chocolate version needs to condense and partially absorb into the cake.
A basic way of making chocolate sauce:
Slowly heat heavy cream
When the cream is hot (not burning), gradually add chocolate or sugar and/or coco powder to the mix to your desired chocolate taste. Sweeten according to your audience.
Put chocolate sauce on cake..
Create two sides of the bolo de cenoura base, make sure they are roughly the same thickness
Have a center layer of chocolate filling as well as cover the cake with a chocolate ganache
Make a center spread of chocolate filling between the two layers.
Roll the cake in a white chocolate sauce
Cover the cake with a chocolate ganache once the white chocolate condenses
