How to make Guanciale/Roman Carbonara

Welcome back. Today we are making Guanciale and as a bonus clip I’ll show you how I make an easy Roman Carbonara.

In this video we used collagen sheets. These are special casings that can be formed to what ever size you need and they create a skin like layer on your whole muscle. This type of casing is much more reliable than cheese cloth and will produce a better and more consistent charcuterie. For more information you can check them out here:
